Examine the software tools used in the production of 3D models.
For example, 3D Studio Max, Maya, LightWave, Cinema 4D, Blender, Sketchup, ZBrush etc.
I have only used blender and unity so I can only give detailed information from them.
Blender lets you create, remove and alter faces, edges and vertices, and is usually used to make models for other software. It can be a little fiddly to work with initially, but once you get practice with it, you can produce some decent models.
Unity lets you create, alter, and remove 3D objects, but usually just uses more complex models from other software such as blender. It isn't quite as fiddly to make things as blender, but unity is more used for making the complete scene itself rather than individual models.
